Mutta kulambu
Here comes the quicker and tastier mutta kulambu( egg gravy) which makes a perfect meal with rice on a lazy saturday when you dont find time to get fish from market or chicken from poultry.
Ingredients
Eggs 4
Onion 1 medium sized
Tomato 1
Green chilli 3 slit
Coconut 1/2 cup
Curry leaves
Turmeric powder 1/4 teaspoon
Chilli powder 1teaspoon
Coriander powder 2 teaspoon
Mustard seeds few
Vendhayam 1/4 tsp
Cumin seeds 1/2 teaspoon
Method
Grind the coconut, onion, tomato and cumin into a smooth creamy paste.
In a pan add some oil and once it s heated up put mustard seeds, fenugreek seeds, curry leaves, onion, green chilli and sauté a while.
Then add chilli powder coriander powder and turmeric powder and sauté well
Then add the ground masala and saute till theoil separates. Then add some water as per the required consistency and bring it to boil
Once it starts boiling simmer the stove and drop in the eggs opening the shell one by one.
Garnish with coriander leaves once the eggs are well cooked.
