Simple Spicy chicken curry
Chicken- 1 kg
Onion- 1 1/2 large(finely chopped)
Tomato- 1
Ginger garlic paste- 2 tbsp
Turmeric powder- 1/4 tsp
Chilli powder-1tsp
Coriander powder- 1 tsp
Garam masala- 1/2 tsp
Cumin powder- 1/2 tsp
Cinnamon- 1 inch
Curry leaves- 2 sprigs
Coriander leaves- few
Oil- 2 tbsp
Salt- to taste
- Clean the chicken with turmeric and salt and keep aside draining all the water. Marinate it with a pinch of salt, turmeric powder and chilli powder(optional)
- In a pan/ kadai, add oil and heat it.
- Once oil is hot, add in the cinnamon, curry leaves and onion and cook in medium flame till it turns slightly golden.Add salt to fasten the process.
- Then add the ginger garlic paste and saute well till the raw smell goes off.
- Add the tomatoes and cook till mushy.
- When tomatoes turn mushy, add the spice powders and mix well.
- Add the chicken pieces into the pan and mix well to get the masala coated over the chicken. Cover and cook for 10 minutes in medium flame. The chicken will ooze out water.
- After 10 minutes, add about 1/2 cup water and salt.
- Cover and cook for about 20 minutes at medium flame. Check and stir periodically. Add water as per the consistency you want. I totally added about 2 cups of water.
- When chicken is completely cooked, check for salt and consistency. It took 40 minutes to get the chicken completely cooked.
- The curry should be a little bit thicker and when its all done the oil will be separated.
- Garnish it with coriander leaves.
