Spicy boneless mutton roast

A protein rich meat roast using less oil!!!


Ingredients

Goat/ Mutton- 500 grams
Ginger garlic paste- 2 tsp
Onion- 1 medium sized
Tomato- 1 chopped
Curry leaves
Coriander leaves
Turmeric powder- 1 tsp
Oil- 2 tsp

To dry roast and grind: Cumin- 1 tsp, Fennel- 1 tsp, Coriander seeds- 1 tsp, Black pepper- 1 tsp, Dry red chilli- 5, Coconut- 2 tbsp grated, Curry leaves- 1 sprig, Cinnamon- 1 inch, Cardamom- 2, Cloves- 2


Method

  • In a pressure cooker, add a tsp of oil, and once oil is hot, add the curry leaves and saute.
  • Add in 1 tsp of ginger garlic paste and saute well till raw smell is out. If you feel like it starts to burn, sprinkle little water and mix well.
  • Add in the cleaned boneless mutton into it and saute till it turns pale and add turmeric powder, salt and mix well. You need about 1- 1.5 cups of water to pressure cook the meat for about 8- 10 whistles.
  • Dry roast all the ingredients in medium heat and grind it with 2 tbsp coconut into a smooth paste.
  • In a pan or iron skillet, add in 1 tsp oil and let it heat. Add in finely chopped onion and let it brown.
  • Add the 1 tsp ginger garlic paste now and saute. Please sprinkle water if it burns.
  • Add in the chopped tomato and cooked mutton. 
  • Then put in the ground paste and mix well and salt. Use the water used to cook mutton. 
  • Cook till the meat turns roasted or dry. Garnish with coriander leaves.
