Thattampayiru pulikuzhambu


Ingredients

Cowpeas(Thattampayiru)- 1/4 cup
Brinjal- 3 sliced
Drumstick- 1
Tamarind extract (lemon sized)
Onion- 1 (medium sized)
Red chilli powder- 1 tsp
Coriander powder- 2 tsp
Turmeric powder- 1/4 tsp
Cumin seeds- 1 tsp
Curry leaves- 2 sprigs
Coconut- 3 tbsp(grated)
Fenugreek seeds- 1/2 tsp
Mustard seeds- 1/4 tsp
Urad dhal- 1/4 tsp
Gingelly Oil- 2 tbsp
Salt

Method

  1. Soak the cowpeas overnight and pressure cook with a little salt for 5 whistles. Reserve the stock.
  2. Make a smooth paste of cumin, coconut and onion.
  3. In a pan, add oil, once hot, add mustard seeds to splutter.
  4. Add urad dhal, fenugreek, curry leaves and sauté for 30 seconds in low flame. Then, add red chilli, coriander & turmeric powders in the same oil and mix well at low flame.
  5. Saute the brinjals and drumstick with salt for about 5 minutes. Add about 1/2 cup of cowpeas stock and let the vegetables completely cook.
  6. Add the tamarind extract, salt and ground paste to it. Stir well.
  7. Cover and bring to a rolling boil.
  8. Serve hot with steamed rice.
