Pineapple cake
Ingredients
Cake:
All purpose flour- 1 1/3 cups
Sugar- 3/4 cups
Salt- 1/4 tsp
Baking powder- 1/2 tsp
Vanilla extract- 1 tsp
Eggs- 3
Butter- 3/4 cup
Milk- 3 tbsp
Pineapple cubes and cherries to decorate the top layer
Whipped cream:
Heavy cream- 1 cup
Confectionary sugar- 3 tbsp
Vanilla extract- 1/2 tsp
Pineapple syrup:
Pineapple cubes- 1/2 cup
Water- 1/4 cup
Sugar-2 tbsp
Method
- Bring the butter, egg and milk to room temperature. Keep the bowl you are going to use to make the whipped cream and the heavy cream in the refrigerator.
- Preheat the oven to 360 F. Grease a loaf pan with butter and dust it with flour and set aside.
- In a bowl, whisk together eggs, milk and vanilla extract.
- In a large mixing bowl, whisk all the dry ingredients.
- Add the butter and half of the egg mixture into the dry ingredients and beat using a hand mixer at medium speed for about 2 minutes. Scrape down the sides.
- Add in the remaining egg mixture to the cake batter and beat for about 30 seconds till the batter becomes creamy and smooth.
- Bake the cake in the loaf pan at 360F for 35 minutes. Check in between because each oven is different.
- While the cake is baking, prepare the whipped cream. Beat the heavy cream, sugar and vanilla extract. Beat at high speed for about 2 -3 minutes or until you get a stiff peak. Keep the whipped cream in the fridge.
- To prepare pineapple syrup, in a sauce pan, add water, sugar and pineapple cubes and cook a while till the pineapple turns mushy. Keep it aside.
- The cake is done when a tooth pick inserted at the center comes out clean.
- Let it cool completely.
Layering:
- Scrape down the top crust of the cake.
- Cut it into 2 layers.
- Keep the bottom layer on a plain surface and just add the pineapple syrup to soak the cake.
- Apply a layer of whipped cream over that and then place the crushed pineapple cubes.
- Place the another cake layer and soak it with the syrup and apply the whipped cream and level down and decorate the top with pineapple chunks and cherries.
