Urunda kuzhambu/ Lentil dumplings in tamarind sauce
Ingredients
Channa dhal(Kadalai paruppu)- 1 cup
Grren chilly- 3
Ginger- 1/2 inch
Garlic- 3 cloves
Red chilly- 1
Curry leaves
Coriander leaves
Tamarind extract (lemon sized)
Onion- 1 (medium sized)
Red chilli powder- 1 tsp
Coriander powder- 2 tsp
Turmeric powder- 1/4 tsp
Cumin seeds- 1 tsp
Coconut- 3 tbsp(grated)
Fenugreek seeds- 1/2 tsp
Mustard seeds- 1/4 tsp
Urad dhal- 1/4 tsp
Oil- 2 tsp
Salt
Method
o Soak channa dhal overnight and grind coarsely with green chillies, red chilly, ginger, garlic by adding little water.
o To this mixture, add finely chopped onions(1tbsp) and curry leaves, salt and mix well.
o Prepare the dumplings in idli cooker from this mixture and keep ready.
o In a pan, add oil, mustard seeds, urad dhal, fenugreek, curry leaves, red chilli powder, coriander powder, turmeric powder and sauté in low flame.
o By the mean time, grind onion, coconut and cumin into a fine paste.
o Add the paste into the pan and add tamarind juice and let the gravy boil.
o Once the gravy is done boiling, add coriander leaves and the dhal dumplings into the hot kuzhambu.
o Let it rest for 15 minutes so that the dumplings soak well in kuzhambu.
