Avarakaai poriyal/ Flat beans stir fry
Avarakkaai is a good vegetable that is free of saturated fat and cholestrol and has high concentration of vitamins and magnesium and an inexpensive source of lean protein. One serving of cooked flat beans provides you iron and dietary fiber.
Ingredients
Avarakaii/ flat beans- 1/2 kg
Coconut- 1/4 cup
Shallot/ small onion- 2 chopped
Mustard seeds- 1tsp
Urad dal- 1 tsp
Channa dal- 1tsp
Cumin- 1/2 tsp
Curry leaves- few
Sambar powder/ Chilli powder- 1 tsp
Turmeric powder- 1/2 tsp
Red chilli dry- 2
Water- 1/2 cup
Oil- 1 tsp
Method
- Wash the beans thoroughly and cut the beans into 1/2 inch slices.
- In a pan, heat up oil and once it splutters, add in mustard seeds, urad, channa and cumin and saute.
- Add shallots and saute till brown and add curry leaves and red chillies.
- Then add in the beans and saute adding some salt, turmeric powder and sambar powder.
- Now, add the water and mix well.
- Cook the beans covered.
- When all the water evaporates, add the coconut and mix well.
