MUTTON CHUKKA




        Mutton chukka is a kind of spicy dry form of mutton curry from South India and is one among the lip smacking non vegetarian recipes. This is the best combination with white rice and rasam or you can have it a side dish for rice and mutton kuzhambu or biryani. This recipe is a little different from the traditional method since this is my own version of mutton chukka in a simple and easy cooking.







Ingredients


Mutton(boneless)- 1/2 kg
Ginger garlic paste- 2 tbsp
Onion- 2 medium sized
Tomato- 3 medium
Red chilli powder- 2 tbsp
Green chilli- 2 slit
Coriamder powder- 2 tbsp
Turmeric powder- 1 tsp
Pepper powder- 1 tsp
Cumin powder- 1 tsp
Fennel- 1 tsp
Curry leaves- 2 sprigs
Coriander leaves- few
Oil- 2 tbsp
Cinnamon- 1 inch
Cloves- 2
Cardamom- 3
Salt
Water- to cook mutton

Cooking method

  • Cut the mutton(lamb) into small bite size pieces and keep it washed and ready.
  • In a pressure cooker, heat 1 tbsp of oil and once it splutters, throw in the whole spices and saute.
  • Then add in 1 chopped onion and cook till it turns translucent.
  • Add 1 tbsp ginger garlic paste and saute till the raw smell is out.
  • Add in the mutton and saute till the colour changes.
  • Now, add in turmeric powder, 2 green chillies, 1 tbsp chilli powder, 1 tbsp coriander powder, fennel  and a little bit of salt and mix well.
  • Add about 200 ml water and pressure cook till the meat cooks completely.
  • The next step is to dry the gravy. For this, take a pan and heat 1 tbsp oil and add in curry leaves and saute. 
  • Then add in the other finely chopped onion and saute till it turns brown. 
  • Add 1 tbsp ginger garlic paste and saute well and add finely chopped tomatoes and cook till mushy. 
  • Throw in the cooked mutton and add rest of all the spice powders(cumin, chilli, coriander) and needed salt and mix well.
  • Keep the flame medium high and stir the gravy till all the water evaporates and the mutton is all coated by the masala.
  • Turn off the flame and add in the coriander leaves.



Note: Dont add too much water to cook mutton because it will take a lot of time to get it dried.
