Vegetable biryani
Vegetable biryani is one such healthy recipe in Indian cuisine if you like to cook it with minimal amount of oil and ghee. The mixed vegetables and rice provides you the dietary fiber and nutrition.
Ingredients
Carrot- 1, Beans-5, Cauliflower- 1/2 cup, Mushroom- 1/2 cup, Potato- 1, Peas- 1/2 cup
Onion- 1
Tomato- 2
Giner garlic paste- 1 tbsp
Curd- 1/2 cup
Basmati/ long grain rice- 2 cups
Water- 3 cups
Coriander leaves, Mint leaves- 1 cup
Green chilli- 3
Chilli powder- 1tsp
Coriander powder- 1tsp
Turmeric powder- 1 tsp
Garam masala- 1/2 tsp
Whole spices- Cinnamon 1inch, cardamom 3, cloves 2, Star anise 1, bay leaf- 1
Oil- 1tbsp, Ghee- 1tbsp
Method
- Soak rice for one hour.
- In pressure cooker, heat up oil and ghee, add the whole spices and fry the thin sliced onions till brown.
- Add the ginger garlic paste and cook well.
- Add the tomatoes and green chillies and cook till mushy.
- Add spice powders and salt and saute well. Then add in all the veggies and coriander, mint leaves and mix well.
- Add curd and cook the veggies 80percent.
- Now you can add the rice and water.
- Check for seasoning and cook in medium flame for a whistle and open the lid once all pressure is released on its own.
