BEETROOT KURMA

                 

Ingredients
Beetroot- 1 (medium sized finely chopped)
Potato- 1 (cubed)
Tomato- 1
Onion- 1/2 (sliced)
Curry leaves, Bay leaves-2, Coriander leaves
Ginger garlic paste- 1 tsp
Turmeric powder- 1/2 tsp
Salt

For grinding:
Cloves-3,
Cardamom- 2,
Star anise-2,
Cinnamon- 1 inch,
Red chilli- 5,
Coriander seeds- 1 tbsp,
Cumin seeds- 1 tsp,
Cashew- 4
Fennel (Sombu) – 1/2 tsp,
Coconut- 1/4 cup

Method
·         Dry roast the ingredients for grinding except coconut and make into a paste adding coconut after few minutes of cooling.
·         Heat oil in a pan & add bay leaves, onions and fry till translucent.
·         Now , add curry leaves, ginger garlic paste, turmeric powder and fry until the raw smell goes.
·         Add the tomato and saute till oil is oozed out and then add the vegetables and mix well by adding the masala, salt and required water.
·         Cook thoroughly with the pan closed in medium flame. Once beetroot is cooked, check for the consistency and taste.
·         Garnish some coriander leaves to serve.
