Mutton kulambu(Tamilnadu)
Ingredients
Mutton- 1 kg
Ginger garlic paste- 1 tbsp
Oil- 2 tsp
Salt
To fry and grind:
Onion- 1 large sliced
Grated Coconut- 2 tbsp
Peppercorns- 1/4 Tsp
Cumin- 1 tsp
Fennel- 1 tbsp
Cinnamon- 1-inch stick
Tomato- 1
Turmeric powder- 1/4 tsp
Red chilli powder- 1 tbsp
Coriander powder- 2 tbsp
Curry leaves- 2 sprigs
Coriander leaves
Method
- In a pressure cooker, add the cleaned mutton pieces, ginger garlic paste, turmeric powder, salt and water. Bring it to a boil. Pressure cook for 5 whistles.The mutton pieces should just be immersed under the water. Reserve the mutton stock.
- In the mean time, make the masala ready. Heat a pan with 2 tsp oil and once oil heats up, add cinnamon, cumin, fennel, pepper, onion and curry leaves and saute thoroughly till onions turn slightly brown.
- Add tomato pieces and cook till mushy. Add red chilli powder, coriander powder and coconut and saute well.
- Once it is cooled, grind into a very fine paste adding a tsp of water.
- In the same pan, add the paste and cooked mutton. Add in the water from the rinsed mixer and mutton stock.
- Cover and cook for 15 minutes or till it comes to rolling boil. Add in coriander leaves.
