Kathirikai Puzhi kari



Ingredients
Brinjal- 1 cup(sliced)
Onion- 1(sliced)
Tomato- 1
Drumstick- 1
Tamarind extract- from lemon sized
Red chilli powder- 1 tsp
Coriander powder- 2 tsps
Turmeric powder- 1/2 tsp
Fenugreek- 1/2 tsp
Cumin seeds- 1 tsp
Mustard seeds- 1/4 tsp
Urad dhal- 1/4 tsp
Currry leaves- few
Gingelly oil- 2 tbsp
Coconut paste- 1 tbsp


Method

  • In a pan,add 2 tbsp oil and once oil is hot, add mustard seeds to splutter.
  • Then add urad dhal and curry leaves.
  • Now keeping the stove in low flame, add red chiili powder, coriander powder, turmeric powder, fenugreek and cumin seeds to the oil and give a stir.
  • then add the onions and vegetables and fry in the same oil for two minutes.
  • At this point, add the tamarind extract and salt and close the pan to get the vegetables cooked.
  • Once it is all done, add the coconut paste and cook not more than 5 minutes.
  • This recipe can be served as a side dish for rice and paruppu kuzhambu.
