Brinjal Potato porial



          This is the recipe which I learnt from my MIL is a life saver in kitchen when i run out of time to cook side dish.  Not only easy to make but also this simple recipe goes good with rasam, paruppu and even plain rice.





Ingredients

Brinjal- 6
Potato- 2
Chilli powder- 11/2 tsp
Shallots- 2 roughly chopped
Oil- 2 tsp
Salt
Grated coconut- 2 tsp


Seasoning

Mustard seeds, Urad dal, Curry leaves, Cumin seeds, Turmeric powder- 1/4 tsp

Method
  1. Heat oil in a pan and do the seasoning.
  2. Add in onions and saute till brown.
  3. Throw in the potato cubes first and add salt. Let it cook covered for about 5 minutes.
  4. Once its half done, throw in brinjal pieces and mix well, add in the chilli powder and mix.
  5. Sprinkle about 2 tbsp of water and cook it covered.
  6. Once done, garnish with grated coconut.
