Drumstick Sambar
I personally feel that Sambar is one of the greatest discoveries in the world of food because it is easy to make and feels good on your tummy and it is also nutritious. The vegetables, the lentils and the tamarind all blended improve the health benefits in sambar. A divine food!!
Ingredients
Tomato- 2
Drumstick-2
Onion- 1(medium sized)
Curry leaves
Hing/ Perungayam- pinch
Mustard- 1/2 tsp
Urad - 1/2 tsp
Cumin- 1/2 tsp
Fenugreek/ Vendhayam- 1/4 tsp
Thur dhal(thuvaram paruppu)- 1/2 cup
Coriander leaves
Chilli powder- 2 tsp
Coriander powder- 1/2 tsp
Tamarind- 1/2 inch
Method
- Wash and pressure cook thur dal in 1 1/2 cups water for 4 whistles.
- Soak tamarind in warm water for 15 minutes to get pulp.
- In a pan, heat oil, add mustard, urad, cumin, fenugreek, curry leaves, hing, turmeric powder and saute.
- Then add in the roughly chopped onions and saute till browned.
- Add tomato cubes, drumstick pieces, chilli powder, salt and coriander powder and mix well.
- Add in the tamarind juice and more water if needed and allow it to cook well.
- Add in the dal and boil for another 15 minutes and garnish with coriander leaves.
